5 Yummy Picnic Dessert Recipes

Mazafati dates are wetter and softer than most varieties you'll find dried — closer to a moist paste than a chewy dried fruit. That texture is awkward for eating out of hand in large quantities, but it's exactly what makes them good in no-bake desserts, where the recipe needs the date to mash, not to hold its shape.

1. Mazafati date and oat balls

Because Mazafati is already soft, you barely need to blend it — a fork will mash 200g of pitted Mazafati into a paste. Mix in 100g oats and a spoon of nut butter, roll into balls. Ready in fifteen minutes.

2. Mazafati and cocoa bites

Mash Mazafati dates with a tablespoon of cocoa powder and a pinch of salt, roll in extra cocoa powder to stop them sticking to your hands. No oats, no nuts, just dates and cocoa — the moisture in Mazafati carries the whole thing.

3. No-bake date and nut bars

Warm 150g Mazafati dates with 3 tbsp coconut oil until it loosens further, stir in 150g chopped nuts, press into a tray, chill, and cut into bars once firm.

4. Stuffed Mazafati with tahini

Slit the dates, remove the seed, spoon in a little tahini and a pinch of sesame seeds. The stickiness of Mazafati holds the filling in place better than a drier variety would.

5. Mazafati and coconut rolls

Mash the dates flat, sprinkle with desiccated coconut, roll into a log, slice into coins. Because Mazafati is already moist, you don't need any added liquid to bind it.

One thing to know before you buy Mazafati specifically for a picnic spread: it doesn't travel as well loose in a bag as a drier date would, since it's softer to begin with. Pack these desserts in a rigid container rather than a soft pouch.
